For beef fajitas. I found a ton online but I want one someone has tried so I know it's good. rolling_smile.gif

I LOVE mexican food, it's my absolute favorite! If you like pineapple juice this is a really good marinade for the beef.
1 cup pineapple juice
1/2 cup soy sauce
2 tablespoons fresh lime juice
1 teaspoon ground cumin
1/2 teaspoon minced garlic

Whisk together the pineapple juice, soy sauce, lime juice, cumin, and garlic in a small bowl. Marinate up to 4 hours.

Then I saute some garlic in olive oil (I love garlic), add some yellow and green peppers, saute for another minute then add some onion and saute for a few minutes. Cover and let cook until veggies are tender. I finish them off with some shredded cheese, sour cream and salsa. thumb.gif

That sounds so yummy!!!!
