I just put a roast in the croc pot, but I didn't have celery (just potatoes, onions, and carrots). I really like the celery when it's cooked with the roast (plus I think it flavors the roast), but I have to leave for a doc appointment. Do you think if I add it later it will still get done with the roast. I think it's usually done before everything else anyways.

Do you think adding a dash of celery salt would flavor the roast just the same as celery?

Celery has got to have a pretty high water content so I'd think it would cook up by evening if you got it in by noon. Maybe switch it to high for an hour after you put it in to be sure. I've done it with potatoes and it's fine.
If you think it won't be cooked in time, you could pre boil it in a pot and add it in cooked.

You can always saute the celery when you get home and then toss it in. This way it doesn't get too over cooked. Celery salt is not the same. It will make it too salty. You can throw in a little celery seed for taste, but a little goes a long way.
