Ashley's school is having a Thanksgiving program (Ashley has been practicing her songs, so cute). Anyways, after the program is a dinner for the parents. The school is providing the turkey, but we are to bring in a side dish. I signed up for a dessert, but the teacher wrote back and said they had too many desserts and asked if I could bring a green salad.
I would like to bring something more than just a regular tossed salad. I was in the grocery one time and they were sampling a green salad that had cooked chicken and walnuts and some kind of creamy dressing in it. Something like that would be perfect, but I can't find a recipe like that... anyone have a similar recipe they like? (I'd probably leave out the walnuts in case anyone has a nut allergy). -------------------- |

I make salad like that except I leave out the chicken for obvious reasons. It contains greens mix, blue cheese, cranberries, walnuts or pecans (sometimes they are candied if you really want those exta calories, lol) and a raspberry vinaigrette dressing.
If you leave out the nuts you lose taste and texture as the whole point of the salad is to have many tastes--sweet fruit and dressing, salty blue cheese, etc, and textures. I make a mean greek salad that everyone loves if you want the recipe for that. It's easy to make too and contains no nuts or other allergens. -------------------- |

I make the same salad Jennifer mentioned but with a honey vinaigrette and always get raves, I've never made it with chicken but I bet if you did, you could leave out the nuts without too much sacrifice. I also like mixed greens, diced or shredded chicken, mandarin oranges, Craisins, and walnuts but that one is easy to leave the nuts out of without compromising it. I use a lemon poppyseed dressing on that one.
