I have a ton of cooked ham and hard boiled eggs left over from yesterday. What can I make with them? Ham salad? Do you have a recipe? Any other ideas?

My mom always made cheesy scalloped potatoes and ham after Easter. Kind of like a casserole. Yum! And you can't go wrong with egg salad or deviled eggs.

I make Ham and 15 bean soup.....You can get the beans in the dry bean section. I just put it in the crock pot for the day...That is what we had tonight.

I just made egg salad
And anytime we have left over ham I make 16 bean soup or just reheat the ham and eat it again and or make ham sandwhiches

Glad you asked...
you start with chipping up the ham and some onions. Saute them in a frying pan using a bit of water and a little coffee, just until the onions are cooked through. Salt/pepper to taste. Serve over grits.
Not a very exact recipe, but you make it with however much juice/gravy you want and however much ham/onions you have, so there is no real formula.
Cheap, easy, very yummy!

ETA: the coffee can be reg or decaf, just make sure it's plain, no flavored stuff and no sugar/cream in it! tongue.gif

I was too chicken to try a new recipe, so we had ham sandwiches one day. And, then I put the rest of the ham in with some soup beans and made deviled eggs. Maybe next year I will get a little braver and try something new.
