OK, here's mine, with three ingredients - lol - My kids call these "Wanna Be Enchiladas" Take some taquitos, beef, chicken or cheese (we prefer chicken, but have had the other two and they are good this way too). Figure on 2-3 taquitos per person, unless you have teenagers that eat you out of house and home Place them in an oven-proof baking dish (either 13 X 9 or 9 X 9, depending on how many you are cooking) Cover with a can of red enchilada sauce (by Old El Paso, or others) - for a full 13 X 9 pan, we use a whole can. When the kids are gone, I use a 9 X 9 pan, and freeze the rest of the sauce for later. Sprinkle with grated cheddar cheese (we like lots, but to suit your taste) You can also add sliced olives - we usually do, except on DH share, he can't stand them Bake at 350 degrees for about 30 minutes Serve with whatever suits you - sour cream, shredded lettuce, chopped tomatoes, guacamole, green onions, etc...or even a salad.
