I usually just use a box mix....Betty Crocker or something...tastes just as good as the real stuff, at least my family thinks so!

Here we are, My mother in laws recipe and my kids and everyone love it. I made 48 small loaves the week before Thankgiving and have only have two left.
Pumpkin Bread 1 & ½ cups sugar 1 tsp baking soda ¼ tsp baking powder ½ tsp each cloves, nutmeg & cinnamon ¼ tsp salt 2 eggs 1 2/3 cups flour 1/3 cup salad oil ½ cup water 1 cup pumpkin Combine in bowl, mix well, grease tin 350 degrees 1 hour. I double the recipe and it uses a whole can of pumpkin and makes two loaves. We usually make a double recipe and then eight smaller loaves.they would be 45 minutes at 350 degrees. My kids insist that we freeze them before eating. They say frozen and then thawed gives them better texture and flavor. Also, my MIL is 91 and has used this recipe forever, always hand stirred. I tried it in the mixer one time and the kids said it was not good! I hope it turns out well for you. Good Luck.
