Hi all,

I had this at my work potluck yesterday. It was really, really yummy and it made a whole sheet cake. tongue.gif It is like a spice cake stuffed with gooey pumpkin filling--but it is decidedly uncakelike, it should be called "crustless pumpkin pie with crumble topping". I hate pumpkin pie and it was incredible. I got the recipe for it from the woman who made it and she said it was quite easy and fool-proof. It also feeds a great deal more than a pie does:

Crust:
1 box yellow cake mix, less 1 cup
½ cup of butter softened
1 egg
Mix well and pat into 9 x 13 pan

Filling:
1 large can of pumpkin pie filling (can be with or without spices)
2/3 cup evaporated milk
2 eggs
Pour over crust

Topping:
1 cup cake mix
½ cup sugar
1 tsp. cinnamon
3/4 cup hard butter
Knead and crumble over top

Bake:
Bake on 350 for 45 min - to one hour
The toothpick test is a good indicator

Tip:
I have always had a hard time with the topping, so I just tried softening the butter. The topping spreads over the top anyway while baking, so either way.

Do you bake the crust first and then the filling or do you bake it all together?
