Are oven fries any safer than fast food ones? I know the problem is caused by the high temps used to fry but was curious if oven temps are high enough to have the same effect?

And I think I read that potato chips aren't any better for the same reason but can't remember where I saw that, anyone know if that's true?

Fries either way you look at it are a starch and too many is not a good thing, but deep freid are the worst

I've never heard about the temperature being an issue. I thought it was basically the oil....

What is the reason the temp is a concern?

Are you talking about the frozen kind that are probably pre-fried and then frozen and packaged? If so, I'm not sure. I do agree that it's an oil thing. But if you're just asking about actual BAKED fries, I imagine they are much healthier than the fast food kind.

I make my own or buy the baked (frozen) kind at Whole Foods. Not because of temp reasons, but for the better oils used.

It used to just be the oil, but now it's also something about potatos at a high temp, they release their own chemical or something that is not good for you. I'll try to find the link.

I would think the deep fried ones are worse. But I dont really know.

I was always told baked fries are healthier, but not sure. I buy the frozen whole foods type kind at our local health food store.
