My friend sent me like 6 bags of coconut and I don't know what to do with it.

I tried making coconut somethings (with egg whites.....this is going to bug me now), anyway I ended up throwing everything away cause it was gross.

I can't find a good recipe for macaroons, so also if you have one please post.

And I can't make pie, cause right now I don't have shortening for crust, and crust isn't sold here.

I'm going to try cookies tomorrow probably as it takes more time than I have right now.

So is there anything else I can make?

Hmmm, if you're able to shread the coconut you could make coconut shrimp. I also found this recipe for coconut pudding if you wanted to try that.

Haupia - Sweet Coconut Pudding

9 C. Fresh Grated Coconut
Coconut Water plus Water to make a total of 3 C.
1/2 C plus 1 T. Cornstarch
1/3 C. Sugar

Bring water to a boil. Mix with grated coconut meat. Let sit at least 15 minutes. Squeeze out coconut milk in cheese cloth or jelly bag until you have 4 1/2 C. liquid. Mix cornstarch with sugar and add coconut milk to make a smooth paste, stirring constantly. Continue cooking until mixture thickens. Pour into greased 8-inch square pan and cool. Cut into 2 inch squares. This pudding is traditionally served at luaus. It is attractive served on ti leaves.
