I got this recipe from Summer website 1 pineapple, peeled, ends trimmed 2 tbsp. firmly packed Safeway Light Brown Sugar 1 tbsp. lime juice 1 container Safeway SELECTâ„¢ Vanilla Ice Cream 1/4 cup Safeway Sweetened Flaked Coconut 1/4 cup chopped roasted and lightly salted peanuts or cashews (optional) 1. Prepare a gas or charcoal grill for direct, medium-high heat (you can hold your hand 1 to 2 in. above the cooking grate only 2 to 3 seconds; visit our Grilling Essential section for complete instructions). 2. While grill heats, cut pineapple crosswise into 1/2-in.-thick slices; cut out the core from each slice and discard. In a small bowl, mix brown sugar and lime juice; brush onto both sides of pineapple slices with a pastry brush. 3. Lay pineapple slices on oiled cooking grate; cover gas grill. Cook, turning once with a wide spatula, until pineapple is hot and tinged with brown on both sides, about 8 minutes total. 4. With spatula, transfer 1 or 2 pineapple slices to each of 4 dessert plates; top with a scoop of ice cream and sprinkle equally with coconut and peanuts, if you like |

Oooh, doesn't sound good to me but my Kylie would LOVE LOVE that. She is a pineapple freak. I'll have to try this one out for her. Thanks for the recipe.
