I just made this to take to a potluck tomorrow. I don't eat seafood but DH and Ashley say it is yummy. I always leave them the extras.
30 uncooked jumbo pasta shells 1 cup finely chopped fresh broccoli florets 1 garlic clove, minced 2 packages (8 ounces each) imitation crabmeat, chopped 1 cup (8 ounces) sour cream 1/2 cup mayonnaise 1/4 cup finely shredded carrot 1/4 cup diced seeded peeled cucumber 1 tablespoon chopped green onion 1 teaspoon dill weed Directions Cook pasta according to package directions; rinse in cold water and drain well. Meanwhile, in a small microwave-safe bowl, combine the broccoli and garlic. Cover and microwave on high for 1 minute or until crisp-tender. Transfer to a large bowl; stir in the remaining ingredients. Stuff into pasta shells. Cover and refrigerate overnight. Yield: 30 stuffed shells. -------------------- |

I go to a potluck once a month (this one is an appetizer only one), so I get some recipes from the monthly dinner. And, a lot is trial and error... if I see a recipe that sounds yummy, I usually try it. I never attempt the really complicated recipes though... 30 minutes or less is my style. LOL. If you do this recipe, make sure you put the crab salad part (the stuffing) in the fridge over night before you serve it... it does make it taste so much better. I usually make the shells the day of the event, but mix the stuffing the night before. -------------------- |
