Ashley will be taking treats into school on Sept 4th. I had planned on making the white cupcakes with the beach scene that I had posted earlier. There is one little boy in her classroom that has a peanut allergy. His mom usually brings in something for him, but I wanted to make the treat peanut free and letting the Mom decide if that is an option for her son or she prefers that he eat the snack that she brings in. I always hear about peanut oil "hidden" in things... what should I consider when making the cupcakes. Can I use normal cooking oil?

I have no clue, but I know you also have to worry about ingredients that can be in cross-contamination, as well. Like if they were made in same places as peanut products, etc.

I am so surprised your school doesn't have a more strict policy on these types of things. Ours only lets you bring in pre-packaged items that have the ingredients on the packages. They do not allow any type of peanut type products at all in the classrooms, but in the lunchroom they do as they have a peanut-free eating area.

That is very nice of you to make something peanut-free and let the mom decide if she wants her child to eat it or not. Not too many parents would be that thoughtful. I have friends who continuously forget Megan's allergies when sending or offering her food. sad.gif As a parent of a child with a food allergy, I'd probably pass on the treat as I'd freak out not trusting anyone to prepare the foods. Not being mean, I freak out when my mom makes Megan foods and her allergies aren't life threatening like a peanut allergy can be.

I think it is so nice of you to make something to make this little boy feel more included in the party.
I have to say that I wouldnt allow him to eat it if it were my son though, only due to high possibility of cross contamination and I am sure she cant feel positive of the ingrediants.
But if you still want to make the gesture, any oil you use is ok, as long as it isnt peanut oil. and you check to make sure all the other ingrediants were not made on belts or plants that have peanut products produced on them.

How about some lollipops or something as treats that are safe?
