And, oh for the other meatloaf recipe -

Tex Mex Meatloaf -
Actually, this one came from the Quaker Oats Site - I haven't tried it yet, but is sure sounds good and easy too!

1 pound lean ground beef
1 cup rolled oats -- uncooked
2 cups salsa -- divided
1 can 15.75 ounce corn -- drained, divided
1/2 cup finely chopped onion
1 egg -- lightly beaten
2 tablespoons finely chopped parsely or cilantro -- divided
1 teaspoon chili powder

Heat oven to 350°F. For meatloaf, combine beef, oats, 3/4 cup picante sauce, 1/2 cup corn, onion, egg, 1 tablespoon cilantro, if desired, and chili powder in large bowl, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan or shape into loaf and place in 8-inch square baking pan.

Bake 55 to 60 minutes to medium (160°F) doneness, until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.

For salsa, combine remaining picante sauce, corn and cilantro in medium bowl; mix well. Serve with meatloaf.

I was going to make this one and I forgot the oats when I went to the store. Wonder if it would turn out alright without them?

Use crumbled up saltine crackers instead - don't make them into a "powder", just crumble them into chunks....you need something to soak up some of the liquid and that will do the trick.

I use saltines, or bread crumbs (I use the Italian Progresso Bread Crumbs)...
