The kids made these cookies at the Lenten fair at church Saturday, and they were SOOOOOOOOO GOOD. I had to hunt down the old lady that had the recipe. LOL. Thought I would share.

Since I saw this I have been telling everyone about these. My daycare, a director of ministries at Church and DDs teacher. Now the teacher has made these before and she told me that the utensils (i.e. bowl, beaters, etc). should be cold (stick them in the freezer before use). Thought I would pass that tidbit on... she said they don't "rise" like they should if the utensils were warm...

Thank you for sharing. I'm so looking forward to making these with my kids next week.

They sort of did. They were kind of mushy in the middle. I beat mine with a hand mixer... and I did it for about 18 minutes. It was really fluffy... the peaks were setting in the bowl like meringue peaks. Not enough I guess.... I probably won't be remaking them..at least not til next year. happy.gif

well, I beat mine again, with my kitchen aid for the full 15 minutes, they were very firm peaks. but they didn't turn out the 2nd time either, although, it was def. better than the 1st time.
I increased the oven temp to 325 too.

next time I will increase the temp to 375, and grease the waxed paper. that should do it. laugh.gif They still tasted good tho.
